MSA — Meat Standards Australia — is the world's only consumer-driven, science-backed beef grading system. It measures how beef will actually eat on the plate, not just how it looks on the hook. If you're buying wholesale for a restaurant or retail counter, understanding MSA is the difference between reliable quality and guesswork.
What MSA measures
The MSA grade combines 15 different attributes into a single index score between 0 and 100, but five factors do most of the heavy lifting:
- Marbling score (0 – 1190) — the intramuscular fat visible in the eye muscle. Higher marbling = juicier, more flavourful beef.
- Ossification — a proxy for physiological age. Lower ossification means younger cattle and more tender meat.
- Hump height — indicates Bos indicus content; higher hump = tougher meat.
- pH — reflects stress at slaughter. Beef with a pH above 5.7 grades poorly.
- Rib fat — the external fat layer, which insulates the carcase during chilling.
What the index score actually means
A cut that scores 55 on the MSA index will eat as "3-star" — everyday-good. A cut that scores 70 will eat as "5-star" — premium restaurant grade. Anything above 75 sits in the 5-star-plus band that we reserve for our restaurant clients.
Three things MSA does NOT tell you
- Halal status — MSA is a quality standard, not a religious certification. Ask separately.
- Feed type — grass vs grain. Both can score highly on MSA. See our grass-fed vs grain-fed article for the difference.
- Aging — MSA measures the raw carcase. Dry- or wet-aging happens after the grade is assigned.
If a supplier can't quote you the MSA index score for a specific cut, they don't know what they're selling you.
How to use MSA on your next order
When you're speccing beef for your kitchen or counter, ask for the MSA index range on the specific cut, not just "MSA-graded". A ribeye and a chuck from the same carcase will have different scores. The higher the score, the more forgiving the cut is under cooking — which matters for busy kitchens where consistency is everything.
